Do you have a veggie noodle maker? What, why not! Well you just have to get yourself one, like now!

They retail from $20 and up and are truly worth the investment, this one is from Target.

Pasta is an energy dense food lots of carbs with very little nutrient, by using vegetables instead of pasta you increase your intake of nutrient rich foods. And decrease your energy intake easily.

I use zucchini’s as a pasta substitute but any vegetable just about can be used. I love the versatility of these noodles, quick to make and can be used in so many dishes that you would normally use pasta. Be aware when using in spaghetti bolognese that you need to add the zucchini noodles last, on top and then mix in and eat. If you leave it too long the zucchini noodles with go mush and it's not so great then.

Ingredients.

1 large Zucchini spiralized . 1 large onion brown or red diced.

1 400g reduced salt tin tomatoes. 230 g Salmon.

Serves 2/3

Method.

Cook salmon in non stick fry pan first, remove and set aside. Add diced onion and cook in salmon oil until transparent. Add tomatoes and bring to the boil.

Reduce heat and add salmon back into pan.

Add the spiralized zucchini and toss until warm through don’t cook as they will go sloppy you just want a little heat.

Serve and add a little parmesan cheese (this will increase all figures below).

A 400 g serve will give you approximately:

Enjoy. P.S the long piece of zucchini that's left from the spiralizer, save it put in a snap lock bag in the freezer and use it for your soups or stews.
